Lorsque la temp\u00e9rature atteint 110\u00b0C, d\u00e9posez des copeaux de mesquite sur les braises.&nbsp;<\/li>\n\n\n\n<li>Mettez la poitrine de porc \u00e0 fumer pendant 3h. Veillez \u00e0 r\u00e9alimenter les copeaux toutes les heures. Piquez un thermom\u00e8tre \u00e0 sonde au c\u0153ur de la viande.
