Effeuillez l\u2019estragon en gardant les tiges et les feuilles s\u00e9par\u00e9es.<\/li>\n\n\n\n<li>Dans une petite casserole, versez le vinaigre et le vin blanc. Ajoutez les tiges d\u2019estragon et l\u2019\u00e9chalote hach\u00e9e.<\/li>\n\n\n\n<li>Portez \u00e0 \u00e9bullition et laissez r\u00e9duire jusqu\u2019\u00e0 obtenir environ 3 c.\u00e0.s.<\/li>\n\n\n\n<li>Filtrez le liquide et versez le dans un bol.<\/li>\n\n\n\n<li>Ajoutez-y les jaunes d\u2019\u0153uf et battez le tout.<\/li>\n\n\n\n<li>Versez le m\u00e9lange dans une casserole et portez-le tout \u00e0 \u00e9bullition \u00e0 feu tr\u00e8s doux ou au bain-marie.<\/li>\n\n\n\n<li>Faites cuire le tout en battant sans cesse avec un fouet jusqu\u2019\u00e0 l\u2019obtention d\u2019une cr\u00e8me onctueuse.
