Originaire des pays chauds notamment anglo-saxons, cette pr\u00e9paration \u00e9tait particuli\u00e8rement appr\u00e9ci\u00e9e lors de la p\u00e9riode hivernale o\u00f9 les r\u00e9coltes \u00e9taient plus faibles.&nbsp;<\/p>\n\n\n\n<p>On utilise le morceau de viande appel\u00e9 \u201ctende de tranche\u201d. L\u2019utilisation d\u2019une trancheuse offre \u00e9galement des tranches fines et r\u00e9guli\u00e8res.<\/td><\/tr><\/tbody><\/table><\/figure>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"preparation-de-la-marinade\">Pr\u00e9paration de la marinade<\/h3>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Dans un saladier, m\u00e9langez le poivre noir, l&#8217;ail, le de piment de Cayenne, le piment en poudre, le miel, la poudre d&#8217;oignon, la sauce soja et la sauce Worcestershire.<\/li>\n\n\n\n<li>D\u00e9posez les fines tranches de b\u0153uf dans le saladier et remuez.<\/li>\n\n\n\n<li>Couvrez le saladier d\u2019un film alimentaire et laissez mariner 24h au r\u00e9frig\u00e9rateur.<\/li>\n<\/ol>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"sechage-de-la-viande\">S\u00e9chage de la viande<\/h3>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Allumez le barbecue pour atteindre 50\u00b0C.<\/li>\n\n\n\n<li>Apr\u00e8s 24h, sortez les tranches de viandes marin\u00e9es en les posant \u00e0 plat sur les grilles et en les s\u00e9parant les unes des autres.<\/li>\n\n\n\n<li>Laissez la viande s\u00e9cher environ 4-5 heures en indirect.<\/li>\n\n\n\n<li>D\u00e9placez les grilles pour avoir un s\u00e9chage homog\u00e8ne.<\/li>\n<\/ol>\n\n\n\n<p>En s\u00e9chant, les morceaux de b\u0153uf prennent une couleur plus fonc\u00e9e et se r\u00e9tractent. Le fumage est termin\u00e9 quand la viande r\u00e9siste au pliage.
