Situ\u00e9 dans la partie arri\u00e8re du bovin, ce morceau de viande dont les muscles sont peu sollicit\u00e9s, est pauvre en collag\u00e8ne. Cela en fait une pi\u00e8ce tr\u00e8s large et donc copieuse se distinguant par son go\u00fbt et sa teneur en jus. Une astuce pour la reconna\u00eetre facilement ?
